Cauliflower Tarkari

  1. In a pot or pressure cooker, heat the oil.
  2. Add fenugreek seeds, let it cook to golden brown.
  3. Add cut potatoes and cook for 5 mins and then add cauliflower and stir.
  4. After 2 mins, add the turmeric and salt and stir. Cover with a lid and let it cook for 5 mins or until the cauliflower starts to soften.
  5. Add the spices; salt, chilli powder and cumin powder. Add the tomatoes and stir them together until the tomatoes have broken down.
  6. Add a bit of water. Cover with a lid and let it cook on its own for 2 mins. Garnish with Coriander. Serve in a bowl.
